Traditional sake production process now revived! Funagake Tenbin Shibori

The Funagake Tenbin Shibori, is a traditional process of sake making, which a large wooden sake tank is lined with sakabukuro (literally meaning a bag for sake) and topped the sake tank with a pile of wooden blocks. Using the weight from a carrying pole and a large stone weighting approximately 1,000 kg, the content is carefully pressed to squeeze the fresh sake out. This traditional production process surely brings out the pure fragrant of rice through squeezing, giving a rich, mellow taste to the sake. In Awaji Island, the sake brewery tours are held from the middle of January to the middle of March each year, where people can watch the traditional sake making using the method of Funagake Genbin Shibori, as well as sake tasting.
