Regional cuisine: Trout rice with green tea (locally known as Amecha)

The trout (Amago) that grows in the pristine mountain streams is called the queen of streams thanks to its beautiful appearance. It has a pink color that is very similar to salmon, and light taste. The rice with green tea made with this fish is a popular local dish in Okumikawa. Each restaurant and home has its own recipe, but in general trout is stewed in soy sauce and sugar until tender to the bone and served with green onion, wasabi or other spices on top of rice and green tea. 郷土料理 天魚茶漬け(地元での略名は あめちゃ)

山間の清流に育つ天魚(あまご)は、渓流の女王とも呼ばれ、美しい見た目が特長です。身はサケに良く似たサーモンピンク色になり、あっさりとした旨みのある味になります。この天魚を使ったお茶漬けは、奥三河の郷土料理として親しまれています。調理方法はお店や家庭ごとに異なりますが、基本は骨まで軟らかく甘露煮にした天魚に、ネギやわさびなどの薬味をのせて、お茶漬けでサラッと頂きます。休暇村茶臼山高原の朝食バイキングでも、お好みの食材を入れてお召し上がり頂いています。
