Nuka-Gama Okibi Murashi

A cast-iron nuka-gama is a traditional rice cooker that used for centuries in the Myoko region until the early Showa era. The Okibi Murashi is a method of cooking rice and uses rice husk (commonly known as nuka) to light a fire. Rice cooked in nuka-gama, which naturally adjusts the heat to the right temperature, offers its fragrant flavor along with the perfect degree of softness. At Kyukamura MYOKO, we offer delectable steamed rice cooked in a nuka-gama for guests who ordered the Nodoguro blackthroat seaperch and nuka-gama kaiseki set.

ぬか釜 熾き火蒸し(おきびむらし)
 
鉄製のぬか釜は、昭和初期まで妙高地域のどこの家庭にもあった伝統的な炊飯器。火を起こす材料となるもみ殻(通称:ぬか)を使ってお米を炊き上げる手法を、熾き火蒸しといいます。火力調整が自然と出来るぬか釜で炊いたお米は、香ばしくふっくらとした口触り。休暇村妙高では、「のどぐろとぬか釜会席プラン」をご利用のお客様に、ぬか釜で炊いたご飯をご用意しております。
